Peri-Peri Chicken

Piri Piri (spelled Peri-Peri) is traditionally made from PiriPiri peppers which originated in South Africa, and were imported to Portugal from two Portuguese colonies, Angola and Mozambique. Today, most hot sauces from Portugal are referred to as Piri Piri.
Chicken Peri-Peri

Ingredient:

4 bone-in chicken breast halves
1/4 cup paprika
2 tablespoons hot chili powder
1 fresh lemon – juiced
3 cloves garlic, minced
1 1/2 teaspoons chopped fresh ginger
3 Tablespoon of Nando’s Peri-peri sauce.
Salt to taste
3 pieces of fresh red chilli – halves
1 onion – sliced

Method:

1. Wash chicken and pat dry.
2. In a large bowl, stir together the paprika, chili powder, lemon juice, garlic, ginger and peri-peri sauce. Rub chicken with the mixture, add salt, place in a dish, and marinate for 3 hours.
3. Preheat oven at 175 degrees C.
4. Place chicken onto the grill and discard the marinade. Put fresh chilli and sliced onion on top. Cook for about 30 minutes, turning occasionally, until the skin is slightly charred and juices run clear.

Ayam Bakar (Grilled Chicken)

Ingredients:

Half Chicken (cut into half)
3 Gloves garlic
2 Onions
2 slices of ginger
Half tablespoon of Black pepper seed
2 tablespoon oyster sauce
2 table spoon honey
1 tablespoon chilli paste
some olive oil
salt to taste
A little bit Dried rosemary and thyme

Method:

1. Clean the chicken and place it into a bowl. Blend or chop Garlic, Onion, ginger and black pepper seed.

2. Put blend’s ingredient into the chicken and add the rest of the ingredients.

3. Marinate the chicken about 1 or 1 1/2 hour. It also can be marinate overnight to get more taste.

4. Heat the oven at 180’c. Place the chicken into an oven-plate and cover with aluminum foil on top. Bake 45 minutes then open the aluminum foil cover and bake another 15 minutes or until cooked. ready to serve.

BBQ Chicken Wings

This BBQ chicken wings i baked in the oven to avoid the fat. Healthy food is essential for my daily meal.

Ingredients:

3 Chicken wings
some fresh rosemary leaves
Some olive oil
2 tablespoon oyster sauce
2 tablespoon soy sauce
Dash of black pepper
2 tablespoon white sugar
2 tablespoon honey
2 cloves garlic
1 small piece ginger


Method:

1. Chop garlic, ginger and rosemary leaves. In large bowl, mix all the ingredients together and marinate for 8 hours or overnight.
2. Heat the oven at 200 degree Celsius. Place the chicken wings in the oven resistant plate then bake for 40 minutes.
3. Ready to serve.
